The History of Longkou Vermicelli

Longkou Vermicelli is one of Chinese traditional cuisine. Vermicelli was first recorded in 《qi min yao shu》. More than 300 years ago, zhaoyuan area vermicelli was made of peas and green beans , it is famous for transparent colour and smooth feel. Because vermicelli is exported from longkou port, it is named “longkou vermicelli”.

The main ingredient in Longkou vermicelli is green bean starch. Unlike traditional noodle making, Longkou vermicelli is made from a pure starch extracted from green mung beans. This gives the noodles their unique texture and translucent appearance. The beans are soaked, crushed, and then their starch is extracted. The starch is then mixed with water and cooked until it forms a smooth, thick liquid. This liquid is then pushed through a sieve and into boiling water, forming long strings of vermicelli.

Besides its fascinating origin, Longkou vermicelli also has an interesting story to it. During the Ming Dynasty, it was said that Emperor Jiajing had a severe toothache. The palace doctors, unable to find a solution, recommended the Emperor to consume Longkou vermicelli. Miraculously, after enjoying a bowl of these noodles, the Emperor’s toothache miraculously disappeared! Since then, Longkou vermicelli has been associated with good fortune and well-being in Chinese culture.

In 2002, Longkou Vermicelli Obtain National Origin protection and only can be produced in zhaoyuan, longkou, penglai, laiyang, laizhou. And only produced with mung beans or peas can be called “Longkou Vermicelli”.

Longkou Vermicelli was famous and known as its excellent quality. Longkou Vermicelli is pure light, flexible and tidy, white and transparent, and become soft on touching the boiled water, will not be broken for a long time after cooking. It tastes tender, chewy and smooth. It owes to the good raw material, nice climate and fine processing in the planting field–northern region of Shandong Peninsula. The sea breeze from the north, the vermicelli can be quickly dried.
